Three Ways to {Pumpkin} Spice Up Your Fall!

Hello lovelies!

This is another short break from the Proverbs 31 series.

The weather is cooling down here in the Pacific North West. Leaves are turning beautiful hues of yellow, orange, and red. It’s Fall! Although this is stereotypical, you gotta love Pumpkin Spice! (Oh, and about the title. It’s kind of a “Sorry, not sorry” moment. I love a good cheesy phrase!) The big one is Pumpkin Spice Lattes, but I found some other ways to enjoy this wonderful Fall spice. Here they are!

  1. Pumpkin Spice Sugar Cookies!

You might recall the Lemon Sugar Cookies I posted back in May. Same idea, different flavor. I used the same base recipe (again, from Bake at 350), but added Pumpkin Spice instead of Lemon!

Pumpkin Spice Sugar Cookies

Ingredients:

3 c unbleached, all-purpose flour
2 tsp baking powder
1 c sugar
2 sticks butter, cold & cut into chunks
1 egg
1/2 tsp vanilla extract
2 tsp Pumpkin Pie Spice

Instructions:

Preheat oven to 350.

Combine the flour and baking powder, set aside. Cream the sugar and butter. Add the egg, vanilla, and pumpkin pie spice and mix. Gradually add the flour mixture and beat just until combined, scraping down the bowl, especially the bottom.

The dough will be crumbly, so knead it together with your hands as you scoop it out of the bowl for rolling.

Roll on a floured surface to about 1/4″ to 3/8″ thick, and cut into shapes. (For these cookies I used my star cookie cutter) Place on parchment lined baking sheets (or my new favorite: Silicone Baking Mats!) and freeze the cut out shapes on the baking sheet for 5 minutes before baking. Bake for 10-12 minutes. Let sit a few minutes on the sheet, then transfer to a cooling rack.

Side note: I have found that one batch of cookies makes about 2 dozen cookies for me. Again, almost all of this recipe and the instructions are from Bake at 350. I only added the pumpkin spice part.

For the decorating, I used burnt orange and white royal icing. I prefer to start with Julia Usher‘s royal icing recipe, as it uses egg whites instead of meringue powder. I made a half batch of icing and added 1 tsp of Pumpkin Pie Spice.

As you can see from the pictures, I decorated my star cookies like little foxes! I added the eyes and nose with my black edible marker. (Just FYI, I only made the foxes pictured. The rest of my cookies were just solid squares. They took less time.)

2. Pumpkin Bars!

SO GOOD. Pumpkin Bars with Brown Sugar Frosting is the perfect fall crowd pleasing treat! Spiced thick & soft pumpkin bars and a thick layer of brown sugar frosting.

I’ve had pumpkin bars before, but this one has a frosting that is a game changer! Most of the time, I’ve seen pumpkin bars with a cream cheese frosting. Cream cheese frosting is super yummy and all, but I was hoping for something different, when I made these. I’m so glad I did! Click on the picture to get to the recipe. Make them. Eat the whole pan! (Just kidding, you probably shouldn’t do that.)

 

3. Homemade Pumpkin Spice White Mocha

PSWM.jpgOkay, I know that I said that I found some ways OTHER than Pumpkin Spice Lattes to enjoy pumpkin spice, but I think this is different enough. Right? Well, either way, it’s yummy! I made this homemade Pumpkin Spice Syrup. Super easy!

Recipe:

1 C Cold Brew Coffee
1/4 C Milk
1 TBS Homemade Pumpkin Spice Syrup
2 TBS Torani White Chocolate Syrup

I had mine cold, but next time I think I’ll heat it up. So yum!
