Happy Thanksgiving (almost)!
So much to be thankful for and so much fun family time to have!
Here is this week’s meal plan:
Spicy Spinach Quesadillas
Slow Cooker Skinny Loaded Potato Soup
Spinach Tomato Tortellini
Potato Broccoli and Pepper Jack Egg Casserole
15 Minute Tilapia
4 Tilapia Fillets
1 Tbs Olive Oil
1/2 Shredded Parmesan
Place tilapia on aluminum foil.
Lightly brush top and sides of tilapia with olive oil.
Sprinkle garlic salt and Parmesan over tilapia.
Either grill over medium heat for 12-15 minutes or bake in over at 375* for 12-15 minutes.
A couple of notes:
- You can pretty much assume that if a recipe calls for cream, half and half, or whole milk, I will substitute fat free milk.
- If a shredded cheese of choice or cheddar is in the recipe, I will use a mexican blend shredded cheese from Winco.
- I often substitute butter with Olive Oil.
