This week Autumn weather has really set in. With this, a couple of colds have also settled into our little home. With my nose running while I was working on meal planning for next week, a new casserole I saw on Pinterest sounded just perfect – Chicken Noodle Soup Casserole. Yum! I’m looking forward to trying that one!
Here is my meal plan for this week: Meal Planning
This week, I added a column to the document. On the far right is a column for absolutely everything listed in the dinner recipes. That way, if someone else wants to go off of that list for their meal plan, nothing will be left out. The far left list of ingredients is still my base list to start with each week. The middle column is just for me and what will actually need to be purchased for my kitchen and use. Again, our breakfasts are made up of cereal or oatmeal, bananas, and yogurt. Our lunches are made up of sandwiches or leftovers. These things are all included in my base list.
Here are the recipes mentioned in the Meal Plan for next week:
Green Bean – Potato – Chicken One Pan Wonder
12 oz Green Beans (frozen or canned)
4 Chicken Breasts (diced)
1 lb Red Potatoes (diced or quartered)
4 Tbs Butter (can sub. Olive Oil)
1 Tbs Italian Seasoning
Preheat oven to 350*
In a 9×13 Pan, make one row of the diced chicken, one row of the green beans, and one row of the diced potatoes.
Cut butter into small pieces and place over the potatoes and beans. (Or drizzle olive oil over potatoes and beans)
Sprinkle the Italian seasoning over the entire dish.
Bake for 1 hr.

Spinach and Artichoke Wonder Pot
8 oz Mushrooms (canned or fresh)
14 oz Artichoke Hearts
4 Cloves Garlic
1 Medium Onion
5 C Vegetable Broth
2 Tbs Olive Oil
12 oz Fettuccini
1 tsp Dried Oregano
1/2 tsp Thyme
4 oz Frozen Spinach
Drain and chop artichoke hearts and slice the onion
Place vegetable broth, olive oil,mushrooms, artichoke hearts, onions, garlic, and seasonings in a large pot.
Break fettuccini in half and place it in the large pot.
Cover the pot and bring liquid to a high boil. Then, reduce the heat to a simmer and turn noodles often.
Once pasta is cooked, stir in the frozen spinach until evenly distributed.
I don’t know that a recipe is really necessary for this one. Super simple and super yummy!
Sweet and Spicy Tilapia
4 Tilapia Filets
1 Orange (juiced)
1 Tbs Lime Juice
1 Tbs Honey
1 Tbs Olive Oil
3 Garlic Cloves
2 tsp Soy Sauce
1/2 tsp Salt
1/2 tsp Cumin
1/4 tsp Black Pepper
Pinch Red Pepper Flakes
Arrange tilapia in a greased 9×13 dish
Combine orange juice, lime juice, honey, olive oil, garlic, soy sauce, salt, cumin pepper, and red pepper flakes in a small bowl.
Pour mixture over the tilapia fillets and let it rest for 15 minutes.
Pour marinade back into a small bowl and set it aside.
Broil tilapia for 5 minutes per side, or until flaky.
Drizzle fish with marinade.
